Rosemary Breadsticks
Coming up with the Twelve Recipes of Christmas wasn’t the easiest thing. First of all, listen to the song. Bear with me for a minute.
On the twelfth day of Christmas, my true love gave to me: 12 drummers drumming, 11 pipers piping, 10 lords a leaping, nine ladies dancing, eight maids a milking, seven swans a swimming, six geese a laying, five golden rings, four calling birds, three french hens, two turtle doves, and a partridge in a pear tree.
Swans, geese, birds, hens, doves, and a partridge. All birds of some sort. Then you’ve got drummers, pipers, lords, ladies, and maids. Not exactly great for cooking inspiration. So we hope you’ll bear with us as we interpret the song somewhat liberally.
We need to ask one other forgiveness. We’re going through the song sort of backwards. We’re starting with day 12 and counting down to day one. Along the way we’ve got desserts, a bread, appetizers, breakfasts, and main dishes. For 12 drummers drumming, we knew the recipe had to be for breadsticks. These breadsticks are firm enough that you could actually use them to drum a little tune on your counter, but the crust gives way with just the right amount of resistance to reveal a chewy and soft interior.
Rosemary Breadsticks – adapted from TLC Cooking
- 2/3 cup milk
- 2 tsp baking powder
- 1 tsp fresh rosemary, finely chopped
The recipe makes 12 breadsticks. How convenient.
- 3/4 tsp salt
- 1/2 tsp black pepper
- 3/4 cup whole wheat flour
- 3/4 cup white flour
- Olive oil or cooking spray
- In a medium sized bowl, mix the milk, baking powder, rosemary, salt, and pepper.
- Add in the flour, a half a cup at a time, and mix well with a spatula or wooden spoon.
- Turn the dough out onto a floured surface and knead gently for 2 minutes.
- Let the dough rest for 30 minutes.
- Preheat the oven to 375.
- Divide the dough into 12 equal portions.
- Brush a cookie sheet with olive oil or cooking spray.
- Roll out each portion of dough into a long stick (about 12 inches).
- Lay the breadsticks on the cookie sheet and brush with olive oil.
- Bake for 12 minutes and then flip the breadsticks over.
- Bake for another 10 minutes.
- Cool.
Notes: These were about the easiest breadsticks ever. We were actually headed out on vacation the day I made the breadsticks and I was worried about having enough time or energy to bake them. But making the dough was a ten minute process and rolling out the breadsticks took just a couple of minutes longer. I loved the pepper in these. Next time I’ll add some minced garlic to the dough as well. Another good idea would be to crack some salt over the oiled breadsticks before putting them in the oven. The outsides were a bit crisp and the insides were nice and chewy. I’d make these again easily, especially if I don’t have a lot of time.
