I froze some plain quince puree for use later, and THAT seems a nice use... different from simple quince jam - although &quot;simple&quot; quince jam is quite good!.I just need to wait for good lemons to come up from Florida. 
I have used 2 kinds of quince the &quot;regular&quot;, large and grow on a small tree and the japanese, quite small and very tart &amp; astringent. But the latter make escellent jam and they turn red when cooking. The &quot;regular&quot; quince is much muter in color.
