This week on Earth Eats, Chef Daniel Orr talks about burgers.
He talks about how a good burger needs a mix of charred meat (or meat substitute) and some fatty richness. Lower fat burgers are fine, but a burger needs something to bind it together. Egg whites work great, as do egg substitute for vegetarian burgers. You can make a burger out of just about anything. Lamb, turkey, salmon, chicken, or vegetarian options such as lentils or white beans. Each type of burger “base” calls out for different “accessory” flavors.

Well, that’ll teach me to not listen to my podcasts as soon as they come out. Last week’s Earth Eats podcast was all about Dandelions. Couple that with Fat of the Land’s latest post on dandelions, and the following conversation heard around our house last night is one I regret.
John: Do you need to forage anything else out of the yard before I mow?
Patricia: Nope. The cat’s-ear will survive the mowing. All that’s left are dandelions.

This week’s Earth Eats podcast was all about local farmers markets.
“There’s more to a local farm market than meets the eye.”
Absolutely! I couldn’t agree more. When we visit the local farmers markets, we’ll often stop to chat with some of the vendors. We love to hear about their latest crop trials on the farm, talk recipes, and just in general find out how they’re doing. We really enjoy seeing the same friendly faces every week. This week, we were excited to see Port Madison Goat Cheese back at both the University District and Ballard Farmers’ Markets.

So you know we cook, and you know we read, but here’s where we tell you that we also listen. We’ve recently discovered a locavore focused podcast that we’ve really been enjoying.
Earth Eats is produced by WIFU, from Indiana University. So far, I’ve learned a lot about the production of maple syrup and what the differences are between an slump, a cobbler, and a crumple.
Is it Seattle focused? No. (Although we’re working on some podcasts of our own, so stay tuned!)
